When it comes to bread, not all fermentation methods are created equal. The difference between natural sourdough starter and industrial yeast isn’t just about taste: it shapes flavor, texture, and, many people tell us, how comfortably the bread sits afterwards. If you love real bread, understanding these two methods can help you choose the right loaf.

Industrial yeast (commercial baker’s yeast) is designed for speed. It allows bread to rise quickly, making it easier for large-scale production. But the downside? It skips the long natural fermentation that develops deeper flavor and texture, and that research suggests can break down phytic acid and reduce fermentable carbohydrates (FODMAPs) in the dough.

Natural sourdough, on the other hand, is made using a wild yeast and bacteria culture that slowly ferments the dough over time. This process enhances the flavor and texture of the bread (many of our customers also tell us it feels easier to digest) while also creating natural preservatives that extend shelf life, without any additives!

Why Choose Sourdough

✔ Easier to Digest for Many: Many of our customers tell us they enjoy sourdough without the discomfort they get from supermarket bread, and research suggests natural fermentation changes the flour in ways that may help. That is feedback, not a guarantee, and none of our products are gluten-free. (Read more in Is Gluten Bad for Me?)

✔ Fermentation and Minerals: Research suggests long fermentation breaks down phytic acid, which can otherwise limit how well the body absorbs minerals like iron and zinc.

✔ Naturally Preserved: Unlike industrial bread, sourdough stays fresh longer without the need for preservatives. (Learn how in Don’t Waste Bread Ever Again)

✔ Better Flavor & Texture: That deep, slightly tangy taste and perfect crust? It comes naturally from fermentation, no artificial enhancers needed.

As amazing as sourdough is, it takes time, a lot of it. Making a proper sourdough starter from scratch can take anywhere from 4 days to a full week before it’s even ready to bake with.

À Boulangerie Atome, on voulait bring real sourdough to everyone, without the hassle. All you have to do is bake it fresh at home in about 30 to 40 minutes.
