Christmas Morning From the Freezer: Croissants and Pain au Chocolat Without the Early Wake-Up

You can serve warm croissants and pain au chocolat on Christmas morning without setting an alarm: they go straight from the freezer into a 375°F (190°C) oven for 18 to 20 minutes, with no overnight proof and no dough to prepare the night before. Order early, keep the box in your freezer, and Christmas brunch is mostly done.

A freezer brunch menu

• Pastries: croissants and pain au chocolat. Count about two per person.
• Butter: our French Isigny butter (salted). Thaw it, preferably in the fridge, the night before.

• Bread for the table: a sourdough baguette (28 to 32 minutes at 500°F in the Atome Pan).

Bake the pastries first. Baguettes need the hotter oven and a longer time, so they suit lunch or dinner better than the breakfast tray.

Your Christmas Eve checklist

2. Move the butter to the fridge to thaw.
3. Put a parchment-lined tray and a cooling rack where you can find them in the morning.
4. Decide who is in charge of the oven. Preheat it before anyone opens a present.
